ABSTRACT

Trehalose (1-a-D-glucopyranosyl a-D-glucopyranoside) is a disaccharide with an a,a-1,1 glycosidic linkage and is widely distributed in plants, insects, fungi, yeast, and bacteria. Trehalose is a kind of disaccharide with a unique protective effect of resistance to drought, low temperature, thermal shock or dehydration stress condition. Japanese scientists discovered trehalose synthase which is capable of producing trehalose with maltose as substrate in 1995.Trehalose synthase reaction does not require consumption of energy, no phosphate coexistent and the enzyme specificity is strong. It only works on maltose formation of trehalose, and maltose on trehalose conversion rate is approximately 70%-80%. raw material from starch by the enzyme into production, or can directly use the cheap price of maltose syrup. Therefore, raw material costs can be greatly reduced and maltose into trehalose by only one step reaction is simple and easy to control. It is a suitable method for industrialized production of trehalose.
