BAKED GOODS IN SOUTH KOREA

In 2010, baked goods grows by 4% in current value terms, to total Won1,765 billion

All segments experience healthy positive growth with strength in both packaged and artisanal products Unpackaged/artisanal bread experiences the best performance in 2010 with 5% growth

Unit prices of baked goods increases by 2% in 2010 with popularity of wellbeing bread products with high pricing as well as increasing prices of flour and other raw materials Individual artisanal bakeries hold 57% value share of baked goods

Baked goods is expected to see a constant value CAGR of 1% over the forecast period

TRENDS

The wellbeing trend among consumers became a most significant factor in bread manufacturing. The consuming pattern was evident with more frequencies in premium product purchase, and consumers demanded bread products that benefited their health. Therefore, more manufacturers developed more products using fresh organic ingredients and innovative baking technologies, such as naturally fermented baking, in order to protect beneficial ingredients from the baking process.

Baked goods experienced healthy growth from 2008, mainly due to a unit price increase because of the rising costs of raw materials and higher domestic inflations. During 2009, the domestic economy suffered from the global financial crisis to show 0.2% GDP growth, which is the lowest since the Asian financial crisis of 1997. With lower disposable income, more South Korean consumers moved to baked goods to replace simple meals at cheaper prices and the trend continued into 2010, while the economic recovery which was slower than expected, meant that baked goods only showed 4% value growth.

Unpackaged/artisanal bread experienced the most significant growth in baked goods of 5% current value growth to reach Won516 billion 2010. A large proportion of Korean consumers purchase breads at

unchained individual bakeries, not only because it is convenient but also because they trust the products baked on-site with fresh materials every day. These individual bakeries have expanded in number of outlets and are easy to find on almost every corner of residential neighbourhoods. Furthermore, their strategy is to offer premium bread products to attract customers with their unique taste to appeal to health and wellness- conscious South Korean consumers.

The unit price of baked goods increased by 2% in 2009 due to consumer preference in premium bread products as well as increasing prices of flour and other raw materials. Most raw materials used to make baked goods including flour, sugar and other addictives are mainly imported from abroad: international raw materials prices affected production costs as well as international raw materials price movements affecting the selling price of products in South Korea.
